Fruit and Nut Flapjacks

If you’re prone to reaching for chocolate and biscuits to beat the afternoon slump, these chewy and gooey fruit and nut flapjacks make for a more nutritious sweet treat.
Each bar is baked with oats and almonds to provide you with a boost of healthy carbs and fats, and then topped with dried cranberries for a super sweet kick.
At only 132 calories with less than 4.5g of sugar per flapjack, they the perfect pick-me-up for at home, in the office or on-the-go.
Not forgetting… these oatmeal bars are super easy to make. Taking just 10 minutes to prepare, the flapjacks can then be popped into the oven and left to bake for 30 mins!

Ingredients:
- 1 tbsp unsalted almond butter
- 2 eggs
- 1 tbsp maple syrup
- 1 tsp vanilla essence
- 200ml skimmed milk
- 160g porridge oats
- 15g almonds, halved
- 15g dried cranberries
- ½ tsp baking powder
- Low calorie oil spray
- 8 tbsp 0% fat Greek yogurt
Method:
- Pre heat oven at 180°C/160°C fan/gas mark 4.
- Whisk together almond butter, eggs, maple syrup, vanilla, and milk.
- Add oats, almonds, cranberries, and baking powder then combine evenly.
- Place baking paper into a square tin and grease with a few sprays of low-calorie oil spray.
- Place mixture into the tin and spread evenly, 1 inch thick.
- Place in the oven for 30 minutes.
- Take out to cool and then cut into bars.
- We think they taste best still warm, served with Greek yogurt!
Want to bulk prep our low-sugar Fruit and Nut Flapjacks? You can double or triple up the quantities in this recipe and then portion up the cooked flapjacks and keen them in the freezer for up to 3 months. When you're ready to enjoy them, defrost them until they reach room temperature and then either enjoy chilled or refresh them in a warm oven (190°C/170°C fan/gas mark 5) for 5 to 7 minutes.
