Saucy Bean Baked Eggs Recipe

INGREDIENTS:
To make the Saucy Bean Baked Eggs you will need:
2 x 400g tins chopped tomatoes
1 x 400g tin mixed beans, drained
200g baby spinach
4 eggs
50g thinly sliced smoked ham, sliced
2 slices of crusty wholemeal bread, toasted
Salt and pepper, to taste
METHOD:
Add chopped tomatoes and mixed beans to a shallow frying pan and simmer for 10 minutes until the tomato sauce begins to thicken.
Add spinach and stir through, leaving to simmer for 5 minutes until wilted. Pre-heat grill to medium.
Make 4 indentations using a spoon in the tomato sauce and crack one egg into each. Sprinkle over ham and season with salt and pepper.
Place under the grill for 5-6 minutes until the egg whites are cooked through and the yolks are slightly runny. Serve with some warm crusty bread and enjoy.
Food prep tip – make extra or box up any leftovers and store in the fridge once cooled for up to 3 days.
