Cook time: 40 minsÂ
Ingredients:
To make the mini toad in the holes:
- 4 lean pork chipolatas
- 1 tbsp sunflower oil
- 2 eggs Â
- 100g plain flour Â
- 100ml milkÂ
- Fresh rosemary Â
- Low calorie oil spray Â
To serve:
- 150g sweet potato, peeled and diced Â
- 60g green beans Â
- Salt and pepperÂ
- 200ml gravy
Method:
Preheat the oven to 220c.Â
Cut the sausages in half and place 2 halves in each Yorkshire pudding tin hole.
Drizzle oil over the sausages and place them into the oven for 20 minutes, turning the sausages halfway through. Â
While the sausages are cooking, whisk together eggs, flour, and milk until smooth.
Take the sausages out of the oven and pour over the Yorkshire pudding mix and sprinkle with rosemary. Take care when pouring the mix as the pan will be very hot.Â
Place the tin back in the oven for 15 minutes until the Yorkshire puddings have risen and are cooked all the way through. Â
Whilst the mini toad in the holes are cooking in the oven, steam or boil the sweet potatoes until they’re soft. Mash the potato and season it to taste with salt and pepper. Â
Steam or boil the green beans until they’re cooked but still have a crunch. Â
Plate up the mini toad in the holes, mash, and green beans before drizzling it with gravy. Â
