Five-a-Day Veggie Frittata Recipe

INGREDIENTS:
To make the Five-a-Day Veggie Frittata you will need:
½ red pepper, diced
½ carrot, grated
1 spring onion, sliced
8 cherry tomatoes, halved
1 handful of spinach
5 eggs, beaten
Low calorie oil spray
Salt and pepper, to taste
METHOD:
Heat a deep frying pan with low calorie oil spray. Once warm, add pepper, carrot, spring onion and cherry tomatoes and fry off for 2 minutes.
Add spinach and stir until wilted. Then, pour over eggs and season well.
Preheat grill to medium.
Cook the frittata in the pan for 4-5 minutes then transfer under the grill for a further 3-4 minutes until cooked through and golden on the top. Serve hot and enjoy.
Food prep tip – make extra or box up any leftovers and store in the fridge once cooled for up to 3-4 days.
