Easy Beef Burritos Recipe

INGREDIENTS:
To make the beef burrito filling you will need:
250g lean beef mince
½ white onion, diced
½ red pepper, diced
½ tsp chilli powder
1 tsp ground cumin
100g tinned black beans
1½ tbsp tomato puree
½ beef stock cube
Salt and pepper, to taste
Low calorie oil spray
To make the burrito you will need:
2 wholewheat tortillas
1 handful of spinach
½ bag of microwavable Mexican rice
60g light mozzarella, grated
METHOD:
Heat a few sprays of low-calorie oil spray in a pan and fry off beef until it’s browned, breaking it up using a spoon.
Add onion, red pepper and spices then fry off for a further 5 minutes until the veggies begin to soften.
Add beans, tomato puree, stock cube and 50ml of boiling water stir. Season with salt and pepper.
Bring to a low simmer and cover with a lid or some tin foil. Simmer for 10-15 minutes until the sauce has thickened and the beef is cooked through.
Top tortilla with spinach, beef, Mexican rice and mozzarella. Fold, roll into a burrito and enjoy immediately.
Optional - Heat a frying pan with some low-calorie oil spray and add burrito to the pan, turning regularly to toast all sides of the burrito until golden brown. Alternatively wrap in tin foil and place in a preheated oven at 200c for 10 minutes until crisp.
Food prep tip – make 3 burritos in advance and wrap in tin foil. Warm up when ready to eat or eat cold on the go.
