Banana Baked Oat Bars Recipe

INGREDIENTS:
To make the Banana Baked Oat Bars you will need:
Wet:
2 ripe bananas, mashed
125g smooth peanut butter
125ml maple syrup
2 tbsp coconut oil
½ tsp vanilla essence
Dry:
180g oats
20g vanilla protein powder
80g dark chocolate chips
Pinch of salt
METHOD:
Preheat oven to 180c and line an 8x8 brownie tin with baking paper.
Mix all the wet ingredients together until you get a smooth consistency.
Add dry ingredients and mix well until combined.
Add to baking tin and spread out evenly. Bake in the oven for 25-30 minutes.
Remove from the oven and leave to cool in the tray for 30 minutes.
Slice into 12 bars or 16 bite sized chunks for on the move.
Food prep tip – store in an airtight container for 7 days. Reheat to get that freshly baked feel or eat on the go cold.
Top tip - Lovely served with a dollop of Greek yoghurt for a protein boost.
