10 Minute Pitta Pizzas Recipe

These 10-Minute Pitta Pizzas are perfect for when you're in need of something healthy, balanced and fun, but don't have much time to spare.
A great option for lunch, dinner, or even just as a snack, this is a healthy alternative to your usual pizza, and it tastes even better.
With a pepperoni and a chicken pizza option, choose the option you fancy, or create your own toppings, and let’s start cooking...

Cook time: 5 mins
INGREDIENTS:
To make a Chicken Pitta Pizza you will need:
1 wholemeal pitta
1 tbsp tomato puree
1 tbsp light mozzarella, grated
25g cooked chicken, sliced
10g yellow pepper, diced
10g red pepper, diced
½ tsp oregano
To make a Pepperoni Pitta Pizza you will need:
1 wholemeal pitta
1 tbsp tomato puree
1 tbsp light mozzarella, grated
20g pizza pepperoni
10g cherry tomatoes, diced
To serve:
Mixed side salad
10g green pepper, diced
½ tsp oregano
METHOD:
Preheat oven grill to medium.
Put together pitta pizzas by topping pitta with tomato puree and grated cheese, then add toppings. Season with salt and pepper.
Put pizzas onto a baking tray and place under the grill for 8-10 minutes, until the cheese is golden, and the pitta pizza is hot. Serve with a side salad and enjoy!
Top tip – toppings can be anything you like, make it your own. Just don’t overload the pitta as it may turn soggy and difficult to pick up.
Food prep tip – make batches of pizzas and leave in the fridge. An easy meal to throw under the grill when you get home.
